Our friends recently got married in late February at Peterson's House, Hunter Valley. To remember the beautiful reception, we've shared the delicious feast.
This is the best butter we have ever had. Pepe Saya butter are hand crafted, giving it a creamier and richer flavour. It's absolutely friggin' delicious and we've already ordered more to store in our fridge.
First course was a delicious blue swimmer crab salad with brown butter emulsion granny smith apple, radish and bonito
Second course was a grilled quail with stone fruit and prosciutto, cherve and dill smoked almonds, baby leaf and white balsamic sauce. It was very tender and savoury, with pops of fruity freshness.
Third course was prawn and saffron risotto with house made bisque. The bisque was creamy and piquant. The prawns gave it a delicious seafood aroma.
Fourth course was a lamb back strap on garlic and Parmesan potato puree with thyme mushrooms and roasted cauliflower.
Fifth and final course was a traditional pavlova served with cream and seasonal fruit. Holy macaroni, this was sooo good! The pavlova was light and airy and the added passion fruit sweetened the bite. We actually had two servings because people were too busy dancing and left their serving to melt 😱
